Apple Date Chutney

a sweet and tart chutney

Ingredients

  • 1 tablespoon mustard oil
  • 1 chopped onion
  • 1 tablespoon grated ginger
  • 4 cups peeled and chopped apples
  • 3/4 cup chopped dates
  • 3/4 cup golden raisins
  • 2 teaspoons salt
  • 1/4 cup sugar
  • 1 1/2 cups vinegar
  • 1 teaspoon red chile powder.
  • 1 teaspoon mustard powder
  • 1 pinch largesaffron
  • 1/2 teaspoon ground cardamom

Instructions

  • In a large heavy bottomed pot, heat oil. Add onion and ginger. Saute until onions become translucent.
  • Add all of the other ingredients with 3/4 cup of water. Bring to a boil. Reduce to a simmer and cook, stirring frequently, until jam like consistency - about 30 minutes.

  • Chill completely before serving.
