#FarmRich Tropical Meatball Kebabs

Ingredients

  • 1/4 pkg. Italian style meatballs
  • 1/4 pineapple peeled, cored and diced
  • 1 1/2 teaspoons grated ginger
  • 1 1/2 teaspoons firmly packed brown sugar
  • 1/8 teaspoon cayenne pepper
  • 1/2 red bell pepper diced
  • 1/2 green bell pepper diced
  • 2 oz. Colby Monteray Jack cheese diced
  • 1 tablespoon olive oil
  • salt and black pepper to taste

Instructions

  • Preheat oven to 425 F. Place a piece of parchment paper on a cookie sheet. Place meatballs on the cookie sheet. Bake for 15 minutes.
  • Meanwhile, combine pineapple, brown sugar, ginger and cayenne pepper in a Ziploc bag. Toss to combine. Leave to marinate.
  • Toss the bell peppers with the olive oil, salt and pepper.
  • When the meatballs are finished cooking, slice them in half and toss with the pineapple. Leave for a few minutes.
  • Now let's put together our kebabs. On each skewer, first place a red bell pepper, then one 1/2 meatball, then add a piece of green bell pepper, a piece of pineapple, a piece of cheese and lastly, another 1/2 meatball.
