Watermelon Salsa

  • 4 cups chopped watermelon
  • 1 bell pepper chopped
  • 1 jalapeno finely chopped
  • 4 scallions finely chopped
  • 2 tablespoons cilantro finely chopped
  • 3 tablespoons lime juice
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • tortilla chips for serving


  • Combine all ingredients except tortillas and mix to combine. Leave for 10 minutes for flavors to develop.
  • Serve with tortilla chips.
