Kolak - Indonesian Dessert Soup

Kolak is a Vegan dessert made of root vegetables cooked in coconut milk and flavored with pandan.

Ingredients

  • 1/2 cup sago or tapioca pearls
  • 3 pandan leaves or pandan essence
  • 1/2 cup palm sugar
  • 1 lb. ripe plantain
  • 1 lb. pumpkin calabaza or kabocha
  • 1 lb. sweet potato
  • 3/4 cup coconut milk

Instructions

  • Soak sago in water for 20 minutes. Drain.
  • In a large pot combine 6 cups water with pandan leaves and sugar. Bring to a boil.
  • Add plantain and pumpkin and simmer for 15 minutes.
  • Remove pandan leaves. Add sweet potato, sago and coconut milk.
  • Simmer for another 15 minutes.

Notes

  • Banana, Cassava and Jackfruit can also be used instead.
  • Don't overcook beyond the time specified as it thickens a lot as it chills.
