Hyderabadi Apricot Dessert - Khubani Ka Mitha + VIDEO is a simple Indian dessert, which is basically an instant apricot jam topped with whipped cream. So simple and yet, so delicious!
Pit the apricots. If using the apricot kernels for garnish, smash the pits to get to the kernels.
Combine apricot halves, water and sugar in a saucepan. Bring to a boil and then cook on medium heat for 15 minutes until thickened to a jam consistency, stirring often.
Meanwhile, whip the cream until you have soft peaks.
To serve, ladle a little of the apricot into a serving dish. Top with whipped cream and then garnish with the apricot kernels or almonds.
