Haitian Spaghetti
This modern upscale version of Haitian Spaghetti is made with smoked sausage and fresh thyme. A family friendly budget recipe that requires just a few simple ingredients.

Ingredients

lb.
spaghetti
1
lb.
chicken sausage
3
tablespoons
olive oil
1
sliced onion
2
teaspoons
fresh thyme
¼
cup
epis
or 1 teaspoon chicken bouillon

tablespoons
tomato paste
Instructions
Cook spaghetti in well salted water, according to package instructions in well salted water until all dente.
Strain the spaghetti, reserving the cooking liquid.
Toss the spaghetti with 1 tablespoon of oil to prevent it from sticking together.
Meanwhile, heat the remaining oil in a pot.
Add sausage and saute until browned. Add more oil, if needed, to avoid sticking.
Add onion and saute until softened.
Dissolve tomato paste in 1 cup of the reserved pasta water. Whisk to combine.
Add to pot with thyme and bring to a boil.
Add cooked spaghetti and toss until well combined and coated with the sauce.
Add reserved pasta water, as needed, so that the pasta is not dry.
To serve, garnish with additional thyme.
Notes
Although I used smoked chicken sausage, you can also use hot dogs or any kind of smoked sausage you prefer.
