Bulgur Chickpea Salad

bulgur
1
cup
boiling water

slow roasted tomato halves
cut in half

canned chickpeas
drained and rinsed
1/2
cup
finely chopped parsley
1/4
cup
finely chopped mint

finely chopped scallions
1/4
cup
olive oil
1/4
cup
lemon juice
3/4
teaspoon
salt
1/2
teaspoon
ground black pepper
Instructions
Combine bulgur and boiling water in a bowl. Stir to combine and leave for 10 minutes.
In a large bowl, combine cooked bulgur with all of the other ingredients. Stir to combine. Let it rest for 1 hour for flavors to develop.
