Blueberry-Pumpkin Seed Parfait

Here is a tasty summer snack or breakfast idea, perfect to enjoy in the heat of summer.

Ingredients

  • 3/4 cup non-fat Greek yogurt
  • 1 tablespoon honey
  • 1 cup blueberries
  • zest of 1 lemon
  • 1 tablespoon orange blossom water
  • 1/3 cup oats
  • 2 tablespoons pumpkin seeds
  • 1 1/2 teaspoons ground cardamom

Instructions

  • In a small bowl, combine blueberries with lemon zest and orange blossom water and toss well.
  • In a small bowl, combine yogurt and honey and mix well.
  • To arrange parfait, first spoon yogurt into the bottom of a glass dish. Add most of the toasted oats, reserving 1 tablespoon.
  • Top with blueberries.
  • Sprinkle remaining oats on top and garnish with mint sprig.
