Balsamic Glazed Beets

Ingredients

  • 2 small beets about 7 oz.
  • 1 tablespoon olive oil
  • 1/2 teaspoon herbs de provence
  • salt and pepper to taste
  • 1 tablespoon balsamic glaze

Instructions

  • Preheat oven to 400 F.
  • Peel and slice beets into thick wedges
  • Toss beets with olive oil, herbs de provence, salt and pepper. Place in a baking dish.
  • Roast in the oven for 40 minutes, until beets are fork tender.
  • Let beets cool. Add balsamic glaze and toss well. Serve chilled.
