Balsamic Glazed Beets

Ingredients
2
small
beets
about 7 oz.
1
tablespoon
olive oil
1/2
teaspoon
herbs de provence
salt and pepper
to taste
1
tablespoon
balsamic glaze
Instructions
Preheat oven to 400 F.
Peel and slice beets into thick wedges
Toss beets with olive oil, herbs de provence, salt and pepper. Place in a baking dish.
Roast in the oven for 40 minutes, until beets are fork tender.
Let beets cool. Add balsamic glaze and toss well. Serve chilled.
