Broccoli & Salami Frittata

Traditional style Italian frittata with broccoli and salami.

Ingredients

  • 5 eggs
  • a pinch of salt and black pepper
  • 1 teaspoon finely chopped fresh oregano
  • 2 tablespoons olive oil
  • 2 tablespoons finely chopped salami
  • ½ cup finely chopped broccoli
  • 2 tablespoon freshly grated Pecorino Romano cheese
  • a pinch of crushed red pepper optional

Instructions

  • In a bowl, beat eggs well. Add a pinch of salt and pepper.
  • Add oregano and beat to combine.
  • In a large skillet, heat oil.
  • Add salami and fry for 1 minute.
  • Reduce heat to medium and add broccoli.
  • Cook for 5 minutes, stirring occasionally.
  • Spread ingredients so they are evenly distributed on the base of the pan.
  • Reduce heat to low.
  • Add eggs slowly so it evenly spreads around the pan.
  • Add cheese and crushed red pepper, if using, on top.
  • Cover pan and cook for 10 minutes until the top is set.
  • Slice and serve.
