In a dry skillet, toast the pine nuts until golden brown.
Quarter or half the tomatoes, depending on the size.
To make the dressing, combine mint and garlic in food processor. Process until finely chopped.
Add mayonnaise, lemon juice, balsamic, salt and pepper. Process until thoroughly combined.
In a large bowl, combine tomatoes and cheese.
Add 1/4 cup of the dressing and mix until thoroughly combined.
To serve, garnish with the toasted nuts.
Notes
You will have extra dressing that you can use with any salad.
