Stuffed Breadfruit Fritters

Primary Ingredients

BREADFRUIT

DRIED SALT COD (BACALAO)

INGREDIENTS – 1 pound dried salted cod – 2 tablespoons oil – 1 small onion – 1 bell pepper – 2 cloves garlic – 1 Scotch Bonnet pepper – 2 tablespoons parsley – 1 tablespoon lime juice – salt – About ½ cup of all purpose flour – oil for frying – 1 breadfruit

FIRST WE PREP THE BREADFRUIT

Cook breadfruit in boiling water until tender.

Mash breadfruit with a bit of water.

Now we make the filling

Saute onion, bell pepper, garlic and Scotch Bonnet.

Add cooked salt cod.

Add parsley and lime juice.

With a little flour, flatten a portion into a flat disc.
