Com Da Ca Chua (Vietnamese Tomato Rice)

Tomato Rice is a Vietnamese Red Rice commonly enjoyed for breakfast. This easy recipe makes use of leftover rice with eggs and tomato paste for a quick and easy breakfast recipe.

Ingredients

  • 2 tablespoons oil
  • 3 cups cooked rice
  • 2 cloves garlic finely chopped
  • 5 tablespoons tomato paste
  • 1 teaspoon chicken bouillon powder
  • 1 tablespoon fish sauce
  • 2 eggs beaten
  • a pinch sugar
  • salt optional

Instructions

  • In a wok, heat the oil.
  • Add garlic and fry for 10 seconds.
  • Add tomato paste and fry for 2 minutes to cook the paste a little bit.
  • Add eggs and bouillon powder.
  • Start to scramble them.
  • As soon as they start to firm up, add rice.
  • Cook until the rice is evenly coated with the tomato.
  • Add fish sauce, sugar and salt, if needed.

Notes

Since salt is included in bouillon powder, additional salt may not be necessary.
