Joloff Rice - Spicy Tomato Rice

1 tablespoon palm oil 1 onion thinly sliced 2 cloves garlic finely chopped 3 cups long grain rice 4 1/2 cups water or chicken broth 5 tablespoons tomato paste 3 tomatoes chopped 5 small chiles finely chopped salt to taste 1 teaspoon sugar tomato slices garnish
In a large pot, heat oil.
Add chopped tomato and chiles. Stir fry for 2-3 minutes, until tomatoes start to soften.
Add water, tomato paste, salt and sugar. Bring to a boil.
Add rice. Bring to a boil again. Cover and reduce to a simmer.
Cook for 25 minutes.
Add the remaining tomato paste and stir to combine.
