Instructions

  • Cook spaghetti in well salted water, according to package instructions in well salted water until all dente.
  • Strain the spaghetti, reserving the cooking liquid.
  • Toss the spaghetti with 1 tablespoon of oil to prevent it from sticking together.
  • Meanwhile, heat the remaining oil in a pot.
  • Add sausage and saute until browned. Add more oil, if needed, to avoid sticking.
  • Add onion and saute until softened.
  • Dissolve tomato paste in 1 cup of the reserved pasta water. Whisk to combine.
  • Add to pot with thyme and bring to a boil.
  • Add cooked spaghetti and toss until well combined and coated with the sauce.
  • Add reserved pasta water, as needed, so that the pasta is not dry.
  • To serve, garnish with additional thyme.

Notes

Although I used smoked chicken sausage, you can also use hot dogs or any kind of smoked sausage you prefer.
