Kelewele - Ghanian Fried Plantain

Kelewele - Ghana style fried plantain is first marinated with aromatics - sweet, spicy, and smoky!

Ingredients

  • 3 ripe yellow plantains
  • 1 tablespoon ginger finely chopped
  • 1 small onion finely chopped
  • 2 chiles finely chopped
  • 1/4 teaspoon salt
  • Oil for frying

Instructions

  • Slice the plantains into 1/2" slices.
  • In a bowl, combine the tablespoon of oil, with the ginger, onion, salt and chile.
  • Add plantain slices and toss to coat. Let marinate for at least one hour.
  • Heat about 1" of oil in a skillet. Once the oil is hot, fry the plantain slices and cook on both sides until golden brown.
  • Serve immediately.
