Papaya Payasam – Indian Papaya Pudding Dessert

Papaya Payasam - Indian Papaya Pudding - a chilled dessert - perfect summertime treat!

Ingredients

  • 14 oz. peeled and chopped papaya
  • 2 cups milk
  • 2 teaspoons saffron syrup or a pinch of saffron
  • 4 tablespoons sugar
  • ¼ teaspoon ground cardamom
  • ¼ + 1/8 cup grated khoya
  • chopped pistacchios garnish as desired
  • sliced almonds garnish as desired

Instructions

  • In a blender, puree the papaya with 1 cup of the milk.
  • Transfer to a saucepan.
  • Add the remaining milk and saffron syrup. Bring to a boil.
  • Add sugar and cardamom. Cook on a high simmer for 5 minutes, stirring occasionally.
  • Add khoya and cook another 5 minutes.
  • Leave to cool and chill in the refrigerator.
  • To serve, garnish with nuts.
