Xuxu, Chayote Stir Fry

Xuxu Bahia Style – Brazilian Chayote

Ingredients

  • 2 tablespoon oil
  • 1 chopped onion
  • 2 finely chopped garlic cloves
  • 1/4 cup dried shrimp
  • 8 malagueta peppers
  • 2 chayote peeled, cored and diced
  • 2 chopped tomatoes
  • 1/4 cup roasted peanuts
  • 2 tablespoons finely chopped cilantro
  • salt to taste

Instructions

  • In a skillet, heat oil.
  • Add onion, garlic, shrimp and peppers. Saute until onions are translucent.
  • Add chayote, tomatoes and 1/2 cup water. Cover and simmer for 25 minutes.
  • Add peanuts, cilantro and salt.
  • Cook for 2 more minutes.

Notes

Use palm oil for a more traditional version.
