Grated Potato Casserole – Riivinkropsu

Ingredients

  • 2 eggs
  • 1 cup milk
  • 1 teaspoon salt
  • 1 teaspoon paprika
  • 2 tablespoons finely chopped parsley or 1 teaspoon dried parsley
  • 2 tablespoons all purpose flour
  • 2 potatoes peeled and grated

Instructions

  • Preheat oven to 350 F. Spray a casserole dish with non stick spray or brush with melted butter.
  • In a bowl, whisk eggs and milk. Add salt, paprika, parsley and flour. Mix well.
  • Add potatoes and using a rubber spatula, fold into batter.
  • Transfer to casserole dish and bake for 50 minutes - 1 hour, until golden brown.

Notes

paprika and parsley were not in original recipe. I added for some additional flavor.
