Breakfast Nachos

Ingredients

  • eggs
  • potatoes
  • turkey bacon
  • diced tomatoes
  • grated Monteray Jack cheese
  • salt and pepper to taste
  • tortilla chips

Instructions

  • Preheat oven to 400 F.
  • Cook eggs as scrambled and season with salt and pepper.
  • Peel and dice potatoes. Deep fry until golden brown.
  • Fry turkey bacon until browned and crispy.
  • Layer chips with all of the ingredients.
  • Add cheese on top and place in oven until cheese melts.
  • Top with tomatoes and serve.
