Bulgur Chickpea Salad

Ingredients

  • 1 cup bulgur
  • 1 cup boiling water
  • 6 slow roasted tomato halves cut in half
  • 15.5 oz canned chickpeas drained and rinsed
  • 1/2 cup finely chopped parsley
  • 1/4 cup finely chopped mint
  • 3 finely chopped scallions
  • 1/4 cup olive oil
  • 1/4 cup lemon juice
  • 3/4 teaspoon salt
  • 1/2 teaspoon ground black pepper

Instructions

  • Combine bulgur and boiling water in a bowl. Stir to combine and leave for 10 minutes.
  • In a large bowl, combine cooked bulgur with all of the other ingredients. Stir to combine. Let it rest for 1 hour for flavors to develop.
