Plantain Spinach Smoothie

Ingredients

  • 1 very ripe plantain
  • 1 cup baby spinach leaves
  • 2 pitted peaches
  • 1 1/2 cups unsweetened So Delicious coconut milk
  • 2 tablespoons coconut peanut butter you an use regular peanut butter or almond butter
  • 1 teaspoon chia seed
  • 1 tablespoon flax seed
  • 1 tablespoon agave nectar optional

Instructions

  • Boil plantain for 15 minutes.
  • Peel plantain and combine with all other ingredients in the blender and mix well.
  • Serve immediately.

Notes

Notes:
You can boil the plantain the day before and put it in the refrigerator overnight. In the morning, just throw everything in the blender for a quick breakfast.
If you'd like a more homogenous color and texture, you can strain the smoothie or do it in a juicer instead of a blender.
