Kolak - Indonesian Dessert Soup
Kolak is a Vegan dessert made of root vegetables cooked in coconut milk and flavored with pandan.

1/2 cup sago/ tapioca pearls 3 pandan leaves 1/2 cup palm sugar 1 lb. ripe plantain 1 lb. pumpkin calabaza or kabocha 1 lb. sweet potato 3/4 cup coconut milk
Soak sago in water for 20 minutes. Drain.
In a large pot combine 6 cups water with pandan leaves and sugar. Bring to a boil.
Add plantain and pumpkin and simmer for 15 minutes.
Remove pandan leaves. Add sweet potato, sago and coconut milk.
Simmer for another 15 minutes.
