Greek Isle Pumpkin Pistacchio Cake

Greek Isle Pumpkin Pistacchio cake is a moist cake made without oil or butter. Low fat but so delicious!

Ingredients

  • 2 cups grated pumpkin
  • ½ cup sugar
  • 1 ½ cups semolina
  • 1 tablespoon baking powder
  • 2 beaten eggs
  • 4 tablespoons honey
  • 1 ½ teaspoons ground cinnamon
  • ½ ground cloves
  • a pinch of black pepper
  • ¾ cup dried currants
  • 3 tablespoons brandy
  • ¾ cup coarsely chopped pistacchios

Instructions

  • In a large bowl, toss the pumpkin and sugar and leave to rest for 15 minutes. This will soften the pumpkin and add the necessary moisture.
  • Preheat oven to 400 F.
  • Spray a 13x9 baking dish with non stick psray.
  • Add semolina, baking powder, eggs and honey.
  • Add cinnamon, cloves and pepper and mix to combine.
  • Add currants and mix until thoroughly incorporated.
  • Drizzle the brandy on top and sprinkle remaining pistacchios on top.
  • Bake for 25-30 minutes, until a tester inserted comes out clean.
