In a deep skillet, heat oil. Add onions and garlic. Saute until they start to change color. Add chorizo and saute for 1 minute.
Add mung beans and 3 cups water. Add paprika. Stir to combine and bring to a boil. Reduce to a simmer and cook for 45 minutes - 1 hour, until beans are tender.
Add salt and stir to combine. Cook for 1 more minute
